1 lb ground chicken
1 tsp garlic powder
Salt & pepper, to taste
2 tbsp cream cheese
2 cups cheddar cheese, shredded (divided)
1 medium zucchini, sliced lengthwise
1 tbsp avocado oil (or olive oil)
Optional: dash of red pepper flakes or Italian seasoning

In a skillet, cook the ground chicken over medium heat with garlic powder, salt, and pepper.
Once fully cooked, stir in 2 tbsp cream cheese and 1 cup of shredded cheddar until melted and combined.
Spoon half the chicken mixture into a greased 8x6x2 (or similar) baking dish.
In another pan, sauté the zucchini slices in avocado oil with a little salt and pepper until just tender.
Layer sautéed zucchini over the chicken mixture.
Repeat with another layer of the remaining chicken, another layer of zucchini, and top it all with the remaining 1 cup of cheddar cheese.
Bake at 375°F (190°C) for 10–12 minutes, until the cheese is melted and bubbly.
