🥢 Budget Keto Chicken Stir Fry with Spicy Yum Yum Sauce

A filling, flavorful meal that won’t break your carb count—or your grocery budget.

This stir fry has become one of my go-to dinners when I need something fast, filling, and flexible. It’s loaded with tender chicken, fluffy scrambled eggs, veggies, and a bold, spicy yum yum sauce that takes the whole thing over the top.

It's also highly customizable. Don’t like mushrooms? Leave ’em out. Want it milder? Tone down the cayenne. Craving extra crunch? Add chopped cabbage. This one works for whatever’s in your fridge—and that’s what makes it budget gold.

🛒 Ingredients:

For the stir fry:

  • 4 chicken breasts, chopped into 1-inch pieces

  • 1 tbsp olive or avocado oil (plus more for finishing)

  • 2 tbsp liquid aminos

  • 1 tsp onion powder

  • 2 tbsp minced garlic

  • 2 eggs

  • 3 tbsp butter (divided)

  • 1 cup frozen peas and carrots

  • 2 cups riced cauliflower or broccoli (or a mix)

  • Optional: sliced mushrooms for sautéing

For the spicy yum yum sauce:

  • 1 cup mayo

  • 1 tbsp no sugar added ketchup

  • 1 tsp cayenne pepper (adjust to taste)

  • 1–2 tbsp water (to thin)

  • Optional: 1 tsp keto sweetener (if you like it sweeter)

👩‍🍳 Instructions:

  1. Sauté the chicken:
In a large skillet, heat 1 tbsp oil over medium heat. Add the chopped chicken and season with liquid aminos, onion powder, and garlic. Stir and let it cook through, stirring occasionally.

  2. Scramble the eggs:
In a bowl, beat 2 eggs with a fork. Melt 1 tbsp butter in a separate pan and cook the eggs over medium-low heat, stirring constantly until just set. Set aside.

  3. Optional mushrooms:
If using mushrooms, sauté them in 1 tbsp butter while the chicken cooks.

  4. Build the stir fry:
Once the chicken is cooked, add the riced cauliflower/broccoli, peas and carrots, and scrambled eggs to the skillet. Stir well. Add another drizzle of oil and a splash of liquid aminos. Cook for another 3–5 minutes until everything is heated through and flavorful.

  5. Make the yum yum sauce:
In a small bowl, mix mayo, ketchup, and cayenne. Add keto sweetener if desired. Thin with 1–2 tbsp water until pourable.

  6. Serve:
Plate the stir fry, top with mushrooms (if using), and drizzle with yum yum sauce. Add more aminos or hot sauce if you like!
